Chemical risk analysis in food safety and public health faces significant challenges due to the vast array of chemicals to which populations are exposed daily. As of 2024, the European Chemicals Agency (ECHA) has approximately 27 000 chemicals registered under the Registration, Evaluation, Authorisation and Restriction of Chemicals (REACH) regulation (ECHA, 2024), while the US Environmental Protection Agency (EPA) lists over 86 000 chemicals on the Toxic Substances Control Act inventory (EPA, 2024). Yet, only a fraction have undergone comprehensive risk assessments, particularly in the US, where less than 5% of the most widely used chemicals are assessed by the EPA. This challenge is even more complicated by the concept of the exposome, which encompasses the totality of environmental exposures individuals encounter throughout their lifetime, including chemicals from air, water, diet, and lifestyle factors (Wild, 2012). Chemical hazards arise from various sources— environmental exposure, occupational settings, and habits like smoking—with food being a major exposure route for the general population. The European Food Safety Authority (EFSA) has identified over 5000 chemicals in food as potentially posing health risks (EFSA, 2023). Despite the EU regulating around 8000 food-related chemicals, the true scope of chemical hazards remains uncertain (European Commission, 2024). The complexity of the exposome highlights the need for integrated approaches to assess chemical exposure across different media and over time, significantly influencing risk assessments in food safety.
