Chromatography is a technique used for the separation of components within a mixture. This separation process occurs as the mobile phase transports various components through the stationary phase. Due to their differing affinities for the stationary phase, the components are carried at varying rates. On a given stationary phase, this affinity is directly influenced by the physical and chemical properties of the compounds, and different chromatographic techniques leverage one or more of these properties to achieve effective separation.[1,2] Chromatographic methods serve both analytical and preparative purposes, with preparative chromatography being particularly valuable for purifying chemical components. This chapter focuses on the analytical applications of chromatography within the domain of food contaminant and residue analysis.
