This chapter highlights the potential of biofortifying eggs as a signifcant dietary source of micronutrients. It brings to the fore the widespread concern of low dietary intakes of a range of micronutrients, including micronutrient defciencies, emphasizing the need to enhance dietary intakes in many populations. Specifcally, the chapter summarizes recent research on biofortifying eggs with key vitamins and trace minerals of relevance to public health nutrition. It includes a commercial case study of vitamin D biofortifcation by a leading free-range egg brand in the UK, involving collaborative academia-industry-funded research. The chapter also covers biofortifcation with trace minerals like iron, zinc, selenium, and iodine, which are known to be defcient in many populations.
