The natural role of an egg is to be an enclosed self-suffcient chamber for the development of a chick. This is why the egg has so many components (> 1000) with a wide range of biological properties, allowing life to emerge (Gautron et al., 2019). When an embryo develops, all its constituents are used to create a chick. There will be no opportunity to bring in nutrients or eliminate waste. This is also why egg molecules possess properties in terms of digestibility and balance of these constituents that make an egg a perfectly balanced food rich in proteins and vitamins with high nutritional value and that is widely consumed throughout the world (Réhault-Godbert et al., 2019).
