Nanocellulose has emerged as a promising material for various applications in food packaging, particularly as a carrier for active materials and color indicators. This chapter has explored the versatility and potential of nanocellulose in improving the functionality and performance of food packaging materials. The unique properties of nanocellulose, such as its high surface area, biocompatibility, and tunable surface chemistry, facilitated the incorporation of active ingredients, such as antimicrobial agents, antioxidants, and flavoring compounds into nanocellulose-based matrices. Nanocellulose materials can play a direct role in enhancing the mechanical strength, water vapor resistance, gas barrier properties, or thermal stability of packaging films. They can also play an indirect role as carriers for other functional materials, such as active ingredients and colorants. Cellulose-loaded materials with active and intelligent components offer enhanced shelf life, quality maintenance, and can provide visual color change to monitor the freshness and spoilage of packaged food products.
