This chapter examines the impact of maize-soybean intercropping on the quality of soybeans. The presence of corn in the intercropping system modifies various environmental factors, including light, moisture, and temperature, which depend on the specific field configurations and planting times. Maize-soybean intercropping significantly influences the chemical composition of soybean kernels, such as protein, fat, isoflavones, anthocyanins, and carotenoids. It also affects the sensory, nutritional, and visual qualities of fresh soybeans. Furthermore, this intercropping system has implications for the fermentation characteristics and nutritive value of corn-soybean silage, expanding its use as forage.
