Application of Nanotechnology in Indigenous Fermented Food Products

This chapter examines the use of nanotechnology in fermented foods, emphasizing its capacity to enhance probiotic treatment, optimize fermentation processes, stabilize enzymes, and provide real-time quality monitoring using nanosensors. Significant advances include nanoencapsulation for the preservation of probiotics, antimicrobial metal nanoparticles for the regulation of spoilage bacteria, and enzyme immobilization for enhanced stability. This chapter discusses safety and regulatory factors, highlighting the significance of toxicity evaluations and adherence to international food safety standards. Challenges associated with scalability and consistencies are also addressed. This chapter explores future trends and research trajectories, highlighting nanotechnology’s capacity to foster sustainability in food production via waste reduction and improved energy efficiency. Case studies illustrate the effective use of nanotechnology in traditional fermented foods, highlighting its advantages in shelf life, sensory characteristics, and nutritional quality.
