Traditional small and medium food enterprises (SMEs) significantly improve local economies, raise incomes, end hunger and poverty, generate employment, attract idle capital from the population, and enhance the flow of capital throughout society. Particularly, during the COVID-19 pandemic, traditional food SMEs helped ensure food security in many cities where supply chains were disrupted and delayed. However, traditional food SMEs face various challenges, such as limited access to modern technology and markets, food fraud, undervaluation, and external shocks. This chapter details the existing vulnerabilities of a traditional fish sauce village in Da Nang City, Central Vietnam, and the different efforts of the SMEs in this village to build their adaptability and resilience capabilities.
