Minimal Processing of Fruits and Vegetables

Growing urbanisation, broken lifestyles, nutritional consciousness, and dual income have all contributed to the increasingly demanding consumer. Convenience and quality are the food market’s new goals. Fresh fruit and vegetable consumption has increased due to consumers’ growing interest in these healthful foods that are low in cholesterol, little to no fat and sodium, high quantities of vitamins and minerals, fibre, and, as of late, possible antioxidants. In this sense, the foods of the future would be minimally processed frozen fruits and vegetables. Fast-food chains and the lodging business can benefit greatly from less processing. Airlines have consistently expressed a need for pre-cut salads, shredded cabbage, and onions. Strict hygienic practices in processing, advanced packaging technology, and maintaining the proper temperature during storage and transit are all necessary for this area to succeed. It is evident that for a considerable amount of time, researchers in the domains of food science, nutrition, technology, associated disciplines, and engineering have examined and investigated the many aspects of minimum processing (MP) food, particularly in the areas of uncooked, fresh, and cold-preserved foods. The practice of preserving trimmed and chopped fruits and vegetables without significantly altering their fresh qualities is known as minimal processing. These goods work well in salads, curries, oatmeal, and custard-like dishes.
