Smoothies are basically a blended mixture of vegetables and fruits often mixed with nuts, yogurt, and crushed ice. This type of mixture is quite palatable and nutritious as it incorporates healthy types of vegetables and fruits into the diet. These blended mixtures are also a good option for kids of all ages. Moreover, these liquids contain rich amount of minerals, trace elements, vitamins, carbohydrates, flavonoids, and phenols. Cold plasma, inert gas treatments, ultrasonic, radiation, high-pressure processing, non-thermal electrical therapies, and membrane processing are some of the useful methods to preserve food value. This chapter details comparison of the dietetic superiority of juices of various vegetables and fruits including carrot, orange, spinach, and sweet lime, processed through novel processing approaches.
