Exploring Options for Designing an Optimal Circular Spent Coffee Grounds Reverse Logistics Network: An Optimization-Based Approach

In this chapter, we explore the development of new business models aimed at creating smart and sustainable systems for collecting and treating spent coffee grounds (SCGs). The focus is on evaluating two different models: one involving circular coffee shops (CCs) and the other without. The evaluation compares the efficiency, environmental impact, and economic viability of both models. The research proposes a smart and sustainable system leveraging new technology to streamline the coffee value chain while minimizing environmental and social impacts. The core of this research lies in designing an optimal SCG collection network. Circular coffee shops serve as local depots equipped with pre-drying technologies, which reduce contamination risks and improve SCG collection efficiency. The findings indicate that the model involving circular coffee shops significantly reduces contamination, improves product quality, and decreases economic and environmental impacts compared to the model without circular coffee shops. Incorporating new technologies into coffee management practices aligns with the latest advancements in sustainable and circular practices, offering a viable path toward circularity in coffee waste management.
