This chapter summarizes how this book will be an informative source of reference to the researchers and scientists working in the area of food science and technology, food regulators, policymakers, producers, healthcare providers, educators, consumers and other stakeholders. The book has 15 chapters and together provides a holistic overview addressing: (a) challenges in food safety such as contamination from chemical contaminants, nanoparticles used in agriculture, pesticides, microplastics, organic pollutants like perfluoro-octane sulphonate and heavy metals; (b) associated exposure and health risks; and (c) a way forward to mitigate the threat to food security and human health.
