Climate change threatens the accessibility, availability, well-being, and food systems stability. Changes in rainfall patterns, temperature, and the frequency of extreme weather events significantly impact food security. Climate change affects food safety and leads to higher foodborne illness and poisoning rates. Changing rainfall patterns, increasing temperatures, and increased rates of extreme weather events put children, pregnant women, and elders at high risk of health problems. Climate change leads to nutrition-related diseases such as malnutrition, overweight, and obesity due to decreased water quality, altered food production, and inadequate food consumption. Stillbirth is a common consequence of climate change, which has the greatest impact on pregnant women and newborns through heatwaves and extreme events. Furthermore, low- and middle-income countries may face severe socioeconomic impacts from climate change due to food insecurity. This chapter will discuss all these health impacts and how to prevent the impacts of unhealthy food among vulnerable communities.
