Consumption of fruits can reduce the risk of development of chronic degenerative diseases because they are rich in antioxidants especially polyphenols; hence the demand for fruits has increased of late in the market. Fruits have a short shelf life, and about 30% fruits are damaged by insects or microbes during transport and preservation. In India, postharvest loss of fresh produces is a serious problem during pre- and postharvest conditions. In order to decrease the postharvest losses of fruits, there is a need for research on novel techniques to prolong the shelf life of food products. On the other hand, consumer’s expectation is low consumption of chemicals on minimally processed fruits, and hence more attention is been paid to the search for naturally occurring antimicrobial and antioxidant substances. Recently, the herbal compounds are being increasingly studied for their suitability as an additive in the edible coating of fruits which would be an interesting and innovative technology for commercial application and an alternative to the use of postharvest treatments leading to the increment of shelf-life of fruits without using any chemical preservatives. In this present review, an attempt is made to summarize the postharvest losses of fruits in India and the current state of research findings on the nutraceutical properties of edible coating of fruits using herbal compounds.
