Detoxification of Pesticide Residue for Safe Vegetable Production

In the production and cultivation of vegetables, pesticides, including insecticides, fungicides, and herbicides, play a key role in the control of pests and diseases. However, the overuse of pesticides often causes crop damage and excessive pesticide residues in vegetables, leading to serious pollution of the environment and concerns of food safety. Thus, it is imperative to better understand the detoxification process of pesticides in plants as well as to explore new ways to reduce pesticide residues in plants. This chapter describes the current use of pesticides in vegetable production and presents the degradation mechanisms of pesticide residues assisted with both exogenous reagents and endogenous gene regulation. The regulation of pesticide degradation in vegetables by genes involves the innate detoxification process including participation of coding genes of cytochrome P450, glutathione S-transferases, UDP–glycosyltransferases and ABC transporter, etc. Besides, the studies related to the regulation of pesticide detoxification by exogenous biostimulants and plant hormones, such as brassinolide, melatonin, salicylic acid, jasmonates, and γ-aminobutyric acid, are reviewed.
