Using insects as food and feed has great potential as a sustainable and nutritious alternative to traditional protein sources. This chapter provides a comprehensive overview of how potential consumers, researchers and policymakers can harness edible insects to address malnutrition and food insecurity. It highlights factors driving the interest in insect-based food and feed, including the increasing global demand for protein, the environmental and socioeconomic impact of insect farming and their potential to drive a circular food economy. There are various current and potential future uses of insects as food and feed, such as incorporating them in human diets as whole insects, processed products and animal feed. The nutritional value of insects is compared to other protein sources. There are opportunities and challenges for incorporating insects into the food and feed industry, including regulatory and cultural barriers. Ways of optimising growth and nutritional composition of edible insects are discussed.
