Carotenoids are red, orange, and yellow pigments synthesized by plants, bacteria, and fungi. However, animals, including humans, cannot synthesize carotenoids and must obtain them through their diet. Understanding the metabolic conversion and distribution of carotenoids within the body is essential for evaluating their functional roles in human health. This chapter introduces topics related to the metabolic conversion and distribution of carotenoids in the body, which are related to the functions of carotenoids in food.
