Ultrasound is a non-invasive, relatively simple, and repeatable method for examining gastrointestinal motility. We devised a method using consommé soup as a liquid test meal and oyakodon (chicken and egg rice bowl) as a solid test meal to evaluate upper gastrointestinal function using a number of parameters, including proximal gastric distension, gastric emptying, antral motility, and duodenal reflux. This chapter introduces the method and some of the results. Ultrasound has great potential for the future, as it can be used with a variety of test meals and can also evaluate the lower gastrointestinal tract.
