Industrial Applications and Challenges of Antarctic-Derived Fungi

Antarctica, renowned for its extreme harshness, unexpectedly harbors over 1000 species of fungi. These fungi have recently garnered significant attention due to their remarkable cold-adapted characteristics, making them potential microbial resources. This chapter explores the history of fungi research conducted during the Japanese Antarctic Regional Expedition (JARE). Subsequently, it presents the author’s applied studies, which investigate the utilization of Antarctic fungi for wastewater treatment and brewing purposes.
