The human brain is an exceptionally complex and metabolically demanding organ that relies heavily on adequate nutrition throughout life, particularly during critical developmental windows such as early childhood and adolescence. This chapter explores the integral role of diet and nutrition in shaping brain development, maintaining cognitive function, and mitigating the risk of neurological disorders. It begins by examining the synergistic effects of physical activity and nutrition in early life, emphasizing how energy availability and essential nutrients influence neurodevelopmental processes, synaptogenesis, and myelination. A detailed discussion follows on the brain’s high energy requirements, highlighting key macronutrients and micronutrients essential for optimal neural function. Special focus is given to plant-based diets, including the Mediterranean dietary pattern, known for its neuroprotective and anti-inflammatory properties. The chapter explores the critical roles of neural fats, including omega-3 fatty acids, as well as essential vitamins and minerals such as B-complex vitamins, vitamin D, iron, zinc, and magnesium in supporting neurotransmitter synthesis, oxidative stress regulation, and brain plasticity. The influence of amino acids, proteins, and other bioactive compounds like polyphenols and flavonoids is also examined in relation to cognitive performance and mental health. Moreover, the gut–brain axis is discussed as a vital link between diet, microbiota, and brain function, especially in the context of aging and mood disorders. Further sections address the role of nutrition in neurodevelopmental and neurodegenerative conditions, including autism spectrum disorder (ASD), attention deficit hyperactivity disorder (ADHD), and Alzheimer’s disease (AD). Age-specific dietary needs during preschool and adolescence are considered, along with the adverse effects of high-fat, Western-style diets on brain health. This chapter emphasizes the importance of evidence-based nutritional strategies in promoting cognitive development, enhancing mental well-being, and preventing neurological dysfunction across the lifespan.

摘要
