Polysaccharides are the most important group of biopolymers with various roles in pharmaceutical, biomedical, and food industries. Marine polysaccharides are complex carbohydrates originated from marine organisms including algae, seaweeds, and bacteria. Structurally, the polymer molecules are connected by glycosidic bonds. A variety of chemical structures, source of organisms, and evolutionary history in different species of marine polysaccharide have contributed to their multifaceted applications in various sectors. This chapter would majorly focus on their sources, classification, extraction procedure, characterization techniques, and applications in the pharmaceutical field.
