With this increasing demand of sustainable, eco-friendly, and non-toxic colors, there is an increase in the use of bio pigments in various industries such as food, cosmetics, pharmaceuticals, and many more. Bio pigments have the ability to provide vibrant colors at the same time prioritizing safety or sustainability. However, their use is limited because of the challenges associated with their stability, complexity, and regulatory concerns. Advancements in analytical methods help in overcoming some of these challenges for example improving production efficiency, detecting impurities and optimizing the storage conditions. This chapter explores the key analytical techniques used to address the issues related to biocolor production and analysis. It also delves into how future studies and advance techniques could revolutionize the biocolor analysis without damaging or altering the biocolor properties and enhancing their production and scalability.
