Emerging Biotechnological Trends and Techniques in Fungal and Lichen Fortification

Fungal and lichenized symbiotic systems, which include between 2.2 and 3.8 million fungal species and more than 20,000 lichen species globally, are emerging as innovative biotechnological platforms for nutritional fortification. Lichens, which form mutualistic partnerships between fungi and photosynthetic partners (algae or cyanobacteria), excel at nutrient accumulation, stress resistance, and bioactive chemical production. Their peculiar structural organisation facilitates to optimise micronutrient concentration, including rare vitamins, minerals, and functional metabolites. Fungi and lichens can be transformed into specific nutrient manufacturing systems using advanced biotechnology techniques, such as metabolic pathway engineering and (CRISPR)-Clustered Regularly Interspaced Short Palindromic Repeats Cas-9 genome editing. This chapter provides thorough insights into the revolutionary potential of fungal and lichen species for generating innovative functional food solutions by critically analysing advanced techniques for nutritional optimisation, bioactive chemical synthesis, and targeted micronutrient accumulation. This chapter presents fungal-lichen biotechnology as an innovative strategy for dealing with global nutritional security, ecological challenges, and personalised nutrition requirements through advanced biological engineering.
