Ayurveda defines how nutritious food can be prepared from forest products, what the components of good food are, and how we can incorporate it into our daily routines. Moreover, consuming an adequate quantity of food is a key principle of Ayurveda for maintaining a healthy life. Ayurveda is a 5000-year-old science that seeks to help individuals understand what is best for them. Its primary goal is to keep a person healthy and cure disease. According to Ayurveda, digestion is more important than merely eating food. Our health completely depends on what we eat and how well we digest it. Ayurveda has always emphasized the importance of easily digestible food. Nowadays, people focus more on consuming processed and fast foods, which can have negative consequences. According to Ayurveda, food should be eaten attentively and with gratitude. It should be fresh, of the highest quality, digestible, flavorful, carefully prepared, and satisfying to the senses. Ayurvedic plants are commonly found in forests, but information about them remains relatively limited. Due to the lack of information and research, these resources are not fully integrated into people’s daily lives. Forest-derived raw products are of very high quality and have specific significance. Every living and nonliving thing in the cosmos is made up of five basic elements known as the Pancha Mahabhootas: Earth (Prithvi), Water (Ap), Fire (Teja), Air (Vayu), and Ether (Akasha). The Pancha Mahabhoota components of ingested food sustain their corresponding tissue elements in the body. This chapter provides an overview of the nutri-ayur components derived from forests, including plants and insects. Forest products are rich in nutrition and possess numerous medicinal properties. This chapter also highlights the potential of forest products as a source of income.
