Indicators of food quality and safety include the detection of pathogens, food particle deterioration, physical damage, and contamination. Advancements in nanotechnology have revolutionized fields such as food packaging, quality control, and monitoring, leading to the development of smart and active food packaging solutions that surpass traditional methods. This chapter focuses on the general introduction of nanobiosensors and their applications in detecting food pathogens and quality, offering real-time monitoring solutions. It examines the advantages of nanobiosensors while also discussing potential risks, challenges, consumer concerns, environmental impacts, and regulatory considerations.
