Working in the food industry is one of the highest risk factors for occupational skin diseases. In confectioners and candymakers, the skin is irritated by the frequent washing and sometimes also disinfection of hands and the frequent wearing of full-layer gloves. Occupational skin diseases in confectioners and candymakers are therefore most commonly caused by irritant reactions. Immediate type reactions of the skin and respiratory tract have been observed to various food proteins and Arabic gum. Protein contact dermatitis caused by food proteins should be excluded in patients with occupational dermatitis. Allergic contact dermatitis is most commonly caused by rubber chemicals and disinfectants. Late type allergic reactions to ingredients of sweets are very rare and may be caused by spices and flavorings.
