The demand for plant-based egg analogs has increased as a result of the global trend toward sustainable and ethical food consumption. As conventional animal-based protein production is increasingly investigated for its environmental impact and health implications, this demand is driven by the necessity of discovering more environmentally sustainable and health-conscious protein sources. Consequently, there is an important need for research on approaches to substitute conventional eggs with plant-based egg alternatives. This chapter covers the current important aspects in the development of plant-based egg alternatives, highlighting the motivations for using egg alternatives, current egg usage and considerations, and the nutritional value of plant-based egg alternatives. Incorporating egg alternatives into daily diets improves health while also promoting a more sustainable and ethical approach to the consumption of foods. Overall, future prospects are recommended to offer novel insights for the development of plant-based egg alternatives.
