The Intersection of Health and Sustainability

There are negative effects on the environment and human health as a result of the increased demand for food from a growing population. The growing popularity of sustainable diets and eating could open up new chances for nutritionists to gain expertise. There are connections between how eating habits can support environmental and health objectives that are being discovered by ongoing research. However, this field presents a challenge for the nutrition professions because pertinent education frequently draws from a less recognizable body of research than traditional nutritional sciences and requires politically motivated, organizational oriented thinking. In order to promote the prospective significance of nutrition professionals, new evidence evaluations and instructional input are crucial as impetus to meet sustainability agenda goals increases. In order to attain sustainability literacy for nutrition professionals, this chapter evaluates sustainable eating and plant diets and takes into account the importance of improved instruction that is more regularly incorporated into nutrition curriculum.
