Microgreens are tiny but mighty powerhouses of nutrition and have carved a niche in the food industry for their intense flavors, vibrant colors, and exceptional health benefits. However, their delicate nature and high moisture content make them highly perishable, presenting a significant challenge in preserving their freshness and extending their shelf life. This chapter unpacks the key factors affecting microgreens’ postharvest stability, from their physiological traits to environmental influences and handling techniques. To combat rapid deterioration, pre-harvest strategies such as optimized lighting and cultivation methods are crucial in enhancing shelf life. Precision harvesting, along with postharvest interventions, including packaging solutions like modified atmosphere packaging (MAP) and biodegradable materials, and cold chain management, further contribute to prolonging freshness. Additionally, advanced treatments such as edible coatings offer promising solutions for maintaining quality and safety. Beyond traditional storage methods, this chapter also spotlights the rising trend of marketing live microgreens—where consumers become the harvesters, enjoying peak freshness straight from their kitchens. However, challenges persist, from microbial risks to logistical hurdles and economic viability. Moving forward, the integration of postharvest technologies breakthroughs with sustainable handling practices revolutionizes microgreens’ fresh produce storage, reduces waste, and caters to an ever-growing demand for nutrient-rich, high-quality greens.
