Medicinal Value of Little Millet, Kodo Millet, and Pearl Millet
摘要
Millet has a wide range of nutritional and therapeutic qualities that aid in treating many illnesses. Numerous antioxidant components, including phenolic flavonoids, are found in millet and are crucial in preventing and treating lifestyle diseases like diabetes, heart disease, gastrointestinal disorders, cancer, inflammation, and more. Consumers have viewed millet as a luxury meal due to its affordability. Unlike other cereals, millets have several benefits, such as reduced maturity times, pest and disease resistance, and increased productivity in arid environments. Little millet is called the King of cereals because of its superior nutritional and therapeutic properties. Since kodo millets don’t contain gluten, they can be used by those who are gluten intolerant. Regarding protein, minerals, calories, and vitamins, pearl millet is just as nutritious as other grains. Considering the potential of these nutri-cereals, this chapter will explore the medicinal values of little millet, pearl millet, and Kodo millet and how they can be included in regular diets as substitutes of other major grains for improving public health. This chapter also highlights their potential as highly nutritious and sustainable food sources.
