Insects have traditionally been used as food and feed, and they also provide indispensable ecosystem services such as pollination and genetic diversity. This chapter gives an overview of the use of insects as food and feed and for diverse other applications, as well as the methods used to rear insects. Most edible insects are harvested from the wild, but there are also semi-domestication and farming methods. Some examples of insect farming and insect biorefineries are presented.
