Food Security and Sustainability Through Energy-Efficient Convective Drying

As the world's population continues to expand, the necessity to ensure food security and sustainability becomes crucial. In order to combat hunger and malnutrition, food security ensures that all individuals have access to wholesome food. By ensuring sustainable food production methods uphold long-term profitability, safeguard the environment, and conserve resources. Drying prolongs the shelf life of perishable goods, minimizes waste, and prevents spoiling all of which are critical for food security. Convective drying, which takes place in the dryer at various temperatures, shortens the drying time as the temperature of the drying air rises for every sample. It guarantees a consistent and dependable food supply, particularly in areas with seasonal fluctuations or restricted availability of fresh crops. In convective drying, hot and dry gas (usually air) is used to remove water vapor from the food's surface and to provide the heat required for evaporation. These efficient drying techniques address the problem of feeding a growing global population, mitigate the effects of food shortages, and strengthen the food supply chain. The importance of convective drying on prolonged shelf life of food products, minimizing losses and encouraging sustainable agricultural practices needs to be addressed for the sustainability. This chapter contributes valuable insights on drying principle, various drying methods, importance and applications ensuring the food systems resilience and fostering a more secure and sustainable future.
