A parallel is drawn between digital twins in industrial engineering and the technology for creating digital models of food products. It is noted that the problem of creating digital twins of food products has not yet been fully studied. The digital twin of a food product at all stages of the life cycle includes three main stages: (1) development of a parametric model of the food product; (2) representation of the technological process of food product production in the form of differential equations; (3) description of the process of digestion and absorption of nutrients in a food product. The use of a digital model (prototype) of a food product and a process allows the characteristics of a final product to be predicted. The example of the Muhammara product shows how a balanced recipe (in terms of protein: fat, ratio) will change its indicators under the influence on just one input parameter—replacing one basic meat raw material type with another.
