AI adoption in hospitality enhances efficiency, automation, and customer experience, yet its full potential in product development, marketing, and sales remains underexplored. This study conducts a bibliometric analysis to examine research trends, key contributors, and AI advancements in hospitality. It identifies dominant themes, publication trends, and research gaps, offering insights for business leaders, policymakers, and researchers. Using Scopus and VOSviewer, the study found that AI research in hospitality grew from 3 publications in 2019 to 76 in 2024, peaking due to post-pandemic AI-driven innovations before declining to 10 in 2025. The U.S., India, and China lead research output. Journal articles dominate, while keyword analysis highlights AI’s impact on automation, customer experience, and service innovation.
