In the era of modernization, humans are very dependent on technology, and it is undeniable that today’s technology is developing very rapidly. This can be seen from the increasing number of products or services that utilize technology and the growing role of technology in more and more interactions. Between manufacturers and customers, which has been increasing rapidly since the beginning of the 21st century. One example of this rapid technological development is “Self Service Technology” (SST). SST is a fusion of new technology and Self-service. SST is rapidly gaining traction in the restaurant industry and has the potential to revolutionize almost every aspect of the dining experience. One example of SST used in restaurant industry companies is Restaurant Service Robots (RSR). RSR performs tasks that are usually done by humans, such as cooking, delivering food and others. This study aims to evaluate SST application using RSR through the Technology Acceptance Model (TAM) theoretical perspectives. The research questionnaires were distributed to 135 restaurant workers and customers who benefitted from RSR in Indonesia. Structural Equation Model (SEM) analysis techniques, path analysis and Confirmatory Factor Analysis (CFA) through SmartPLS 3.0 were employed. The results show that ease of use can affect someone’s liking and using RSR. Moreover, one’s attitude toward using RSR depend on its usefulness and enjoyment. Additionally, the RSR’s usefulness, enjoyment, and attitude toward use significantly affect someone trying the RSR service. In contrast, actual system usage and perceived enjoyment indirectly positively affect restaurant workers’ and customers’ behavior and intention to use the RSR application. The discussion sparks critical thinking about RSR. In the long run, these findings support the world’s sustainability goals on industry innovation and economic growth related to food service and customer interaction to enhance efficiency, reduce labor costs, and create a unique dining experience.
