Millets in Sustainable Development: Consumer Dynamics and Sustainable Diets

Millets are the traditional grains currently getting famous about its health benefits and ensuring good health and well-being remains one of the most pressing challenges. This research investigates key determinants motivating consumer behavior towards inclusion of millets in their daily diets. This study investigating about the innovativeness, consumption habits, health benefits to unravel the intricate dynamics that shape consumer choices regarding sustainable food options such as millets. Innovativeness is one of the factors, illuminates the willingness and openness to adopting millets in their food habits. Further, this study aims to measure the consumer habits with respect to millets and millet-based products which provide a deeper understanding of established routines and behaviors, shedding light on the feasibility of integrating millets into daily meals, considering prevailing cooking practices and dietary preferences. The research conducted to measure consumer attitudes towards millets, exploring the overall evaluation and perception of these millet-based food products. Consumer’s positive attitudes towards millets are rooted in health consciousness, environmental considerations, or cultural factors, influencing the acceptance of millets as a dietary choice. Perceived usefulness is analyzed to understand how consumers perceive the practical benefits of millets and millet-based products, encompassing aspects such as nutritional health benefits, ease of preparation, verities and versatility in cooking. The results of this investigation hold significant impact for policymakers, marketers, agriculturalist and researchers seeking to promote sustainable and nutritious food choices.
