LEAN Management is a manufacturing system based on a set of methodological tools that help eliminate all operations which do not add value to a product, service or process, thereby increasing the value of each activity implemented. The elimination of what is not required, the reduction of process waste and the improvement of operations are generally achieved. As LEAN is widely considered an excellent system for improving performance in industrial sectors such as automotive or aerospace, the aim of this study is to clarify the level of usage of these techniques in the Andalusian agri-food industry (Spain), which could help to upgrade such a traditional sector. A survey was used to identify the state of implementation, for which a questionnaire form was designed and assigned to 279 companies from the eight provinces of Andalucia. An amount of 62 responses were received. For the entire field of study (Andalucia), 31 of those surveyed have technical knowledge about LM, and 19 of them have implemented one or more LEAN tools, the most used: SMED, Visual Management and 5 s. Companies with the greatest number of LEAN tools coincide with those with the highest turnover, internationalization, or development.
