Deep Eutectic Solvents for Extraction and Detection of Adulterants in Food Samples

Deep eutectic solvents (DESs) have emerged as innovative green solvents with a high potential for food adulteration analysis. This chapter explores the fundamental characteristics, formation, and classifications of DESs, highlighting their eco-friendly nature, biocompatibility, and tunable properties for effective extraction and detection applications. The unique hydrogen bonding networks in DESs facilitate superior solubility and selectivity for diverse analytes, including dyes, metal oxides, phytosterols, and synthetic drugs, from complex food matrices. Various analytical techniques, such as HPLC-UV, GC-MS, and electrochemical approaches, are detailed for DES-based food safety assessments. Moreover, the chapter addresses the environmental and economic advantages of DESs alongside key challenges in their stability, recyclability, and viscosity management. The findings underscore DESs as sustainable and efficient alternatives for enhancing food quality control and ensuring compliance with regulatory standards.
