Inflammatory bowel diseases (IBD), comprised Crohn’s disease (CD), ulcerative colitis (UC), and IBD unclassified (IBD-U), are chronic inflammatory diseases of the gastrointestinal tract that can significantly affect nutritional status, growth, and overall health, particularly in pediatric patients. Thus, nutritional assessment and interventions play a critical role in effective IBD management, both during active disease exacerbations and remission for effective maintenance. In this chapter, we provide a comprehensive approach to nutritional interventions, including the utilization of exclusive and partial enteral nutrition (EEN and PEN) and specific defined diets as treatment modalities for managing disease-related inflammation and promoting mucosal healing. Furthermore, we review the role of the Mediterranean diet as a supportive strategy for maintaining remission and minimizing disease exacerbations. Future directions include ongoing research in sustainable dietary therapies that address the unique nutritional needs of IBD patients and the focus on precision nutrition which addresses the interplay between specific components of diet, gut microbiome, and immune responses.
