This chapter examines biotechnological strategies for improving sensory quality, quality analysis, and sensory evaluation in food processing. Biotechnology plays a critical role in improving the flavor, nutritional value, and shelf life of fruits and vegetables while ensuring food safety. Genomic techniques accurately characterize crop traits critical to sensory appeal, while yeast strain selection optimizes fermentation, influencing taste and aromatic complexity. Microbial fermentation introduces new flavors and enhances umami and sweetness, while enzymatic technologies improve flavor and texture. Microencapsulation preserves volatile compounds, extending their sensory impact. Advanced quality analysis techniques, such as polymerase chain reaction (PCR) and deoxyribonucleic acid (DNA) sequencing, ensure rigorous quality control by detecting contaminants and authenticating product origin. Metabolomics aids in flavor profiling, and biosensors monitor fermentation dynamics, pathogen presence, freshness indicators, and storage conditions to enhance safety and product integrity during production. Tools such as electronic nose and tongue provide objective assessments of aroma, taste, and texture. Emerging technologies such as e-flavor artificial intelligence (AI), virtual reality (VR), and augmented reality (AR) offer innovative insights into consumer preferences and sensory perception. Through these biotechnological advances, this chapter provides a comprehensive understanding of how modern biotechnological tools enhance food processing and quality assurance, ensuring both product safety and quality.
