Providing the population with a healthy food that respects planetary boundaries and does not exceed the Safe Operating Space (SOS) is challenge for humanity. Universities are institutions with significant capacity for action within public policies, particularly in the political instrument of public food procurement. This paper evaluates the Shared Safe Operating Space (SoSOS) of the University Restaurant (UR) for the consumption of two staple foods, minimally processed, which have significant historical and cultural relevance to the Brazilian population: rice and beans. To this end, the SOS was obtained from the EAT-Lancet Commission’s climate change target for food production, applied to three sharing principles (economic, agri-land, and caloric), and finally, Absolute Environmental Sustainability was calculated for climate change. The study assesses environmental sustainability, based on the planetary boundary of climate change, to reduce GHG emissions from the rice and beans consumption in university restaurants in Brazil. Applying different sharing principles demonstrated variations in the SoSOS values. The climate change impacts of beans consumption respect the SoSOS, while rice impacts exceed its limits for all applied sharing principles. The absolute sustainability rates for economic, agricultural, and caloric rice consumption sharing of rice were 4.40, 14.30, and 1.68, and for beans 0.28, 0.30, and 0.11, respectively. The results emphasize the necessity to redefine purchasing strategies and establish comprehensive criteria for more sustainable food procurement practices within UR´s.
