Modifications of Beta-Glucan

β-glucan is a polysaccharide and made up of D- glucose units linked by β(1–3), (1–4), and/ or (1–6) glycosidic linkages. A variety of bioactive functions are initiated by β-glucan, including anti-tumor, antibacterial, wound healing, anti-oxidant, and lipid-lowering activities. In addition to its bioactive role, β-glucan has wide utility in the food and pharmaceutical sectors. However, high molecular weight (MW) β-glucans are insoluble in their native form, which limits their wide application. The solubility and bioactivity of β-glucan can be improved by different modifications. The modifications of β-glucan can be done either by physical, chemical, biological, or enzymatic methods.
