This chapter explores the rise of ultra-processed foods (UPFs) and their profound impact on public health, emphasizing the need for informed dietary choices and interventions to mitigate adverse health outcomes. Despite the economic benefits of the food-processing sector, the widespread availability and consumption of UPFs have been linked to various chronic diseases, including obesity, cardiovascular disorders, cancer, and mental health concerns. The classification of foods according to the NOVA system provides insight into the extent and purpose of processing, highlighting UPFs’ distinct characteristics and nutritional composition. UPFs, characterized by their high energy density, low nutrient content, and extensive use of additives, pose significant health risks, unlike minimally processed alternatives. This chapter examines the mechanisms through which UPFs contribute to obesity, cardiometabolic disorders, cancer, and mental health issues, shedding light on the intricate relationship between diet and disease. Emerging evidence suggests that UPFs may promote overconsumption, disrupt metabolic processes, and induce inflammation, exacerbating the risk of chronic diseases and mortality. This chapter concludes with strategies for reducing UPF consumption, emphasizing the importance of promoting whole and minimally processed foods, enhancing nutritional literacy, and implementing policy measures to regulate the production and marketing of UPFs. By raising awareness of the detrimental effects of UPFs and advocating for healthier dietary patterns, this research aims to empower individuals and communities to make informed choices and improve overall population health.
