The Consumer Purchasing Behavior During the Health and Economic Crisis Caused by the SARS-CoV-2 Pandemic and Its Impact on the Use of New Digital Distribution and Communication Channels of Food Stores in the Area of Value Delivery

The SARS-CoV-2 pandemic has led to changes that have disrupted the way consumers consider and purchase food. At the same time, the corona crisis and its consequences have highlighted the necessity to take into account new consumer practices and the increased role of digital technologies. The mentioned facts were reflected in the structure of the paper. In the first part of the paper, the purchasing behavior of consumers during the health and economic crisis caused by the SARS-CoV-2 pandemic is analyzed, with an emphasis on food purchases and its impact on the investigated customer segments. The second part of the paper analyzes the impact of the crisis on the use of new digital distribution and communication channels of food stores in the area of value delivery. The paper is based on two researches . The results of the research carried out in 2021 provide information about consumer attitudes towards different sources of food purchases and their behavior in food stores during the SARS-CoV-2 pandemic. The results of the research carried out in 2022 show the extent to which new digital innovations related to the purchase of food are gradually diverting consumers from existing purchasing technologies. The conclusion of the paper provides a brief summary of the study, limitations of the study, and future research directions .
