Delivery Systems for Antimicrobials

The antimicrobial activity is significantly restricted in intricate food matrices, as substances such as enzymes, glutathione, and titanium dioxide can effectively deactivate antimicrobial agents through either specific or nonspecific interactions. Consequently, innovative delivery systems have emerged as a promising avenue to enhance food microbial safety. This chapter aims to provide a comprehensive overview of antimicrobial agents and their respective delivery systems in food, particularly focusing on emulsion-based, nanosized carrier-based, and film or coating-based systems. Additionally, it highlights recent research on the applications of these systems in diverse food matrices. Furthermore, the potential toxicity of these delivery systems for food antimicrobials is discussed.
