The chapter discusses the rapidly evolving challenges and opportunities in food safety and microbiology, focusing on the impact of microorganism evolution, climate change, and the development of new food systems. It was emphasized how microorganisms adapt through genetic mutations, such as in the case of foodborne pathogens and viral recombinations, posing continuous threats to food safety. Climate change, particularly global warming, intensifies microbial proliferation, altering food production and storage, while introducing risks like flooding-related contamination. New food systems, including alternative protein sources and sustainable farming practices, present both opportunities for innovation and new hazards. Additionally, the gap between scientific advances, such as electrospinning and cold plasma technology, and their industrial application highlights the need for safer, more cost-effective, and scalable solutions in the food industry. The chapter underscores that addressing these dynamic challenges requires integrating scientific knowledge, technological innovation, and regulatory frameworks to ensure a safer global food system.
