Multispectral Imaging Technique: Principles and Recent Applications in Food Processing

Multispectral imaging is a powerful non-destructive technique that offers valuable insights into food industry viz., food quality, safety, and processing. This chapter provides a comprehensive overview of multispectral imaging theory, principles, instrument and setup, image processing and analysis, and recent applications in food processing. Beginning with the fundamental principles of multispectral imaging, including instrumentation and image processing techniques, the chapter explores its diverse applications in the food industry. This chapter also highlights how multispectral imaging enables the assessment of food quality, detection of defects and contaminants, composition analysis, monitoring of processing operations including packaging inspections, drying and dehydration process. Furthermore, recent advances such as the integration with machine learning and robotics, as well as emerging trends in portable device development, are discussed. Despite its potential, challenges such as calibration and standardization remain. Nevertheless, multispectral imaging presents a promising pathway towards enhanced food quality assurance, safety, and sustainability in the modern food processing landscape.
