This chapter describes the process of conceptualizing and implementing a service-learning project on mushroom cultivation in the Kamarkuchi village of Assam State in the Northeast of India. The service project goals included student learning in a real-life setting, improving nutrition for women and children, and empowering the women of the village by creating a sustainable source of income by adopting mushroom cultivation. This chapter describes how this project was implemented with the help of six students from Assam Don Bosco University and the villagers (women, children, and unemployed youth). It goes on to describe some of the outcomes for the students and the women in the village, as well as the challenges to sustainability.
