The article contains the specifics of the regional food market potential researches in the context of the transformation of the state strategy in this area. The purpose of the study is to search for mechanisms to achieve food security at the federal and regional levels by assessing the potential of regional food markets for the formation of optimal agri-food policy. A set of principles, techniques, and methods were used, including analysis and generalization, induction and deduction, and empirical methods. We identified the shortcomings of the current food safety assessment system. The organizational and economic mechanism of interaction of agri-food market subjects is proposed for solving problems of food security.
