This chapter explores changing trade patterns in the Lower Gambia River in the early modern period. The study provides a general overview of the history of European arrival in the kingdom of Niumi and explores an important shift in the salt trade. Niumi, particularly the town of Juffure, played a significant role during the height of the Atlantic trade in the region, provisioning European traders and thereby enabling the transatlantic commodity and slave trade. The chapter focuses on the height of British trade on the river and looks at changes in the trading landscape in regards to how exchanges were made. Through an examination of historical documents, and archaeological evidence from four loci at Juffure, the transformation of the riverbank from a peripheral supplier of salt to a provisioning point for transatlantic trade is evident in the transformation of foodways.
